Apple Dumplings


1 3/4 c flour; unsifted
1 ts salt
1/2 c shortening
1 egg yolk
3 Tbs water
1 Tbs lemon juice
2 Tbs sugar
1/2 ts cinnamon
6 apple halves, pared & cored
3/4 c sugar
2/3 c water

Mix flour and salt. Mix in shortening with a pastry blender or fork. Mix egg yolk, water, and lemon juice. Mix into flour mixture with fork. Dough should be just moist enough to cling when pressed. Shape into ball. Preheat oven to 450. Grease an 8x8x2 pan. Roll out dough into a 12x18 rectangle. Cut into six 6" squares. Mix 2 Tbs sugar and cinnamon. Roll apple halves in sugar mixture. Place 1 hollow side down in each square. Bring corners together, moisten, and seal. Heat 3/4 c. sugar and 2/3 c. water to boiling. Pour over dumplings. Bake 40 min. or until brown.
