Pumpkin Pie


2 shells
4 c. pumpkin
3/4 c. sugar
1/2 ts. nutmeg
1 ts. ginger
1/4 ts. cloves
2 Tbs. molasses
1/4 ts. salt
5 eggs, lightly beaten
1 1/2 c. light cream
3/4 c. brandy or calvados

Preheat oven to 375. Blend the pumpkin with the remaining ingredients so that you have a creamy puree. Taste for seasoning. Pour the mixture into the pie shells and bake for about 50 min or until knife comes out clean. Makes 2, 8" pies
