Duck


1 Duck
2 c. apples, celery, or carrots (quartered)
1 slice onion
2 tsp. salt
1/4 tsp pepper

Clean duck, wash thoroughly. Let hot water run through cavity. Fill duck with apples, etc. and tie. Rub skin with slice of onion, then with salt and pepper. Roast uncovered at 350, allowing 20-30 min. per lb. If desired, baste every 10 min. with 1 c. of orange juice. Discard dressing before serving.
