4 tsp. baking powder
1 tsp. salt
3/4 tsp. cinnamon
1/4 tsp. nutmeg
3 eggs, seperated
1 3/4 c. milk
1/4 c. shortening, melted
1/2 c. pumpkin
3/4 c. pecans, chopped
Sift together dry ingredients. Beat egg yolks, combine with milk, pumpkin,
and shortening. Add to dry ingredients. Beat egg whites til stiff, fold
into batter. Pour onto hot waffle iron, sprinkle with 3 Tbs. nuts.
